Kerang Motel (MS Ludhar Pty Ltd) is seeking an experienced Cook with a background in Indian and Tandoor-style cooking to join our kitchen team on a full-time basis. This is an opportunity to work in a supportive regional hospitality environment serving accommodation guests and local diners in the Gannawarra Shire.

Task & responsibilities

• Prepare ingredients and cook food using a range of methods including Tandoor, grilling, frying, steaming, and baking in a commercial kitchen environment
• Prepare authentic Indian dishes including Tandoor-cooked breads, marinated meats, and traditional curries to a consistent standard
• Prepare spice blends, marinades, and masalas in accordance with established recipes and kitchen standards
• Portion and plate dishes to the required quality and presentation standards for restaurant service
• Follow food safety and hygiene procedures including correct storage, labelling, and temperature control of food items
• Assist with the receipt, storage, and rotation of kitchen stock and the monitoring of inventory levels to minimise wastage
• Work under the direction of the Head Chef and business directors to deliver food service to restaurant and accommodation guests
• Work cooperatively as part of the kitchen team to ensure smooth and efficient service across all meal periods
• Work as part of a team to maintain a safe and supportive kitchen environment

Qualification & experience

• AQF Certificate III in Commercial Cookery or equivalent qualification, or a minimum of 3 years of demonstrated experience in a commercial kitchen in lieu of formal qualifications
• Demonstrated experience in the preparation of authentic Indian cuisine including Tandoor-style cooking techniques
• Experience in the preparation of spice blends, marinades, and traditional Indian recipes in a commercial kitchen setting
• Ability to work efficiently and accurately across multiple dishes in a fast-paced kitchen environment
• Sound understanding of food safety and hygiene standards in a commercial kitchen
• Ability to work effectively as part of a team
• Minimum 1 year of experience in a commercial kitchen environment
