Full-Time Cook – Rasam, Port Melbourne

NGGS Pty Ltd, trading as Rasam, is seeking an experienced Full-Time Cook to join its busy restaurant in Port Melbourne, Victoria.

Salary: From $80,000per annum plus superannuation (subject to experience)

About the Role

The successful applicant will be responsible for preparing and cooking a variety of menu items in accordance with Rasam’s recipes, food-quality standards and operational procedures.

The role requires the ability to work efficiently in a fast-paced commercial kitchen while maintaining consistency in taste, presentation, hygiene and service times.

Key Duties and Responsibilities

Prepare, season and cook a variety of Indian dishes and other menu items in accordance with established recipes.

Prepare ingredients, sauces, marinades, gravies, accompaniments and other food items required for daily service.

Follow portioning, presentation and food-quality standards.

Monitor cooking times and temperatures to ensure food is prepared safely and consistently.

Check the quality and freshness of ingredients before preparation and service.

Assist with food preparation, stock rotation and safe storage of ingredients.

Maintain cleanliness and organisation of kitchen work areas, equipment and utensils.

Comply with food safety, hygiene and workplace health and safety requirements.

Coordinate with kitchen and front-of-house staff during busy service periods.

Assist with monitoring stock levels, ingredient usage and reducing food wastage.

Support senior kitchen staff with daily kitchen operations and menu preparation.

Ensure meals are prepared and presented consistently during dine-in and takeaway service.

Requirements

Relevant Diploma or Certificate IV qualification in Commercial Cookery or a related field.

At least 1 year of relevant experience as a Cook in a commercial kitchen.

Experience preparing Indian cuisine is  must

Good knowledge of food preparation, portion control and food safety requirements.

Ability to follow recipes and maintain consistency in food quality and presentation.

Ability to work efficiently under pressure and as part of a team.

Reliable, punctual and committed to maintaining high food-quality standards.
