About the Role
The successful candidate will be responsible for preparing, seasoning, cooking and presenting a variety of dishes while maintaining consistent standards of quality, presentation, food safety and hygiene. The duties below have been structured to closely reflect the duties for Cook, including food-quality checks, temperature control, preparation and cooking, portioning and presentation, safe food storage, dietary requirements, menu planning and staff training.
Key Duties and Responsibilities
- Examine ingredients and food products before preparation to ensure freshness, quality and suitability for use.
- Prepare and cook a variety of menu items in accordance with established recipes, portion requirements and restaurant standards.
- Operate and regulate the temperatures of ovens, grills and other cooking equipment to ensure food is cooked safely and correctly.
- Measure, prepare, season and cook ingredients using appropriate cooking methods and techniques.
- Monitor food throughout the cooking process to maintain consistency in taste, texture, quality and presentation.
- Portion cooked food appropriately, arrange dishes on plates and add sauces, gravies, garnishes and other accompaniments prior to service.
- Store raw ingredients, prepared food and cooked products appropriately in temperature-controlled facilities in accordance with food-safety requirements.
- Prepare and cook meals to accommodate special dietary requirements, allergies and customer requests where required.
- Assist with planning menus and estimating food requirements according to anticipated customer demand and restaurant operations.
- Monitor ingredient usage and stock levels and assist with maintaining adequate food supplies while minimising unnecessary wastage.
- Maintain clean and hygienic food-preparation, cooking and storage areas and ensure kitchen equipment and utensils are properly maintained.
- Assist in guiding junior kitchen staff and apprentices in food preparation, cooking procedures, hygiene practices and safe use of kitchen equipment.
- Work collaboratively with other kitchen staff to ensure meals are prepared efficiently and delivered within appropriate service times.
Skills and Requirements
- AQF Certificate III in Commercial Cookery with at least two years of on-the-job training, or AQF Certificate IV, or an equivalent relevant qualification.
- Alternatively, at least three years of relevant experience may substitute for the formal qualification, consistent with the ANZSCO skill-level framework.
- Relevant practical experience working as a Cook in a commercial restaurant or similar dining establishment.
- Sound knowledge of food preparation, cooking techniques, portioning and presentation.
- Ability to operate ovens, grills and other commercial kitchen equipment safely and effectively.
- Good understanding of food hygiene, safe food handling, temperature control and storage requirements.
- Ability to prepare meals for customers with special dietary requirements.
- Strong organisational and time-management skills with the ability to perform effectively during busy service periods.
- Ability to work collaboratively within a professional kitchen team.
- Reliable, hardworking and committed to maintaining consistent food quality and presentation.
