LabourLens is recruiting on behalf of Mildura Magic Pty Ltd t/a Caffeine Extraction. We are seeking a skilled and motivated Chef to join the team on a full-time basis, working 38 hours per week. The successful candidate will be responsible for preparing and cooking a variety of breakfast and lunch dishes, maintaining food quality and presentation, assisting with menu planning, managing kitchen supplies, and ensuring compliance with food safety and hygiene requirements. Task & responsibilities
- Design and update breakfast and lunch menus featuring egg dishes, focaccias, salads, pasta, schnitzels, sandwiches and other café-style meals.
- Calculate food quantities, ingredient expenses and labour costs while controlling portions and reducing food wastage.
- Purchase and oversee kitchen supplies, including fresh produce, meats, poultry, dairy products, bread and other essential ingredients.
- Cook and prepare menu items such as eggs Benedict, smashed avocado, quiches, focaccias, schnitzels, salads, pasta, wraps and sandwiches.
- Check the flavour, quality, serving size and presentation of meals throughout preparation and service.
- Organise food preparation and communicate with management, kitchen employees and waiting staff regarding menu needs, customer requests and operational matters.
- Show appropriate cooking methods and guide kitchen staff in food preparation, cooking, plating and presentation techniques.
- Deliver meals efficiently and consistently during busy breakfast and lunch services.
- Adapt meals to meet dietary needs, including vegetarian and gluten-free requirements, where appropriate.
- Monitor stock levels and ensure all ingredients are correctly labelled, rotated and stored.
- Implement and maintain food-safety, hygiene and sanitation standards throughout the kitchen.
- Keep kitchen equipment, preparation surfaces and storage areas clean and properly maintained in accordance with relevant standards.
- Recruit, train and supervise kitchen staff when required, providing instruction on recipes, portion control and safe food-handling procedures.
- Store, freeze and preserve food correctly to protect its freshness, quality and safety.
- Oversee kitchen activities to ensure compliance with workplace health and safety requirements.
Qualification & experience
- Certificate IV in Kitchen Management/Commercial Cookery and/or a Diploma of Hospitality, supported by strong culinary knowledge and an understanding of food-safety standards.
- A minimum of 1 years’ relevant experience as a Chef in a busy commercial kitchen.
- Proven ability to prepare a variety of café-style breakfast and lunch meals, including egg dishes, focaccias, salads, pasta, schnitzels, sandwiches and wraps.
- Capacity to follow and enhance the existing menu while introducing new ideas based on seasonal produce and customer preferences.
- Sound understanding of kitchen operations, including stock control, ingredient rotation, portion management, food costing and waste minimization.
- Thorough knowledge of food hygiene, safe food-handling practices, and workplace health and safety requirements.
- Ability to work effectively within a fast-paced kitchen and provide support and guidance to junior staff members.
- Strong commitment to consistently producing high-quality meals that meet presentation standards and customers’ dietary needs.
- Excellent organizational and time-management skills, with the ability to prioritize tasks and perform efficiently during busy service periods.
- Professional and positive approach, with a focus on customer satisfaction and maintaining the café’s quality standards.
