About the role
The Cook is responsible for preparing, cooking and presenting food to Sugo's standards in a busy commercial restaurant kitchen. The Cook works as part of the kitchen brigade under the direction of the Head Chef and contributes to the consistent delivery of a high-quality menu, a safe and hygienic kitchen environment, and efficient service across all trading periods.
Duties and Responsibilities
• Prepare mise en place for each service in accordance with menu specifications, portion controls and recipe cards issued by the Head Chef;
• Wash, peel, cut, weigh and portion ingredients accurately and efficiently;
• Prepare stocks, sauces, doughs, pasta, marinades, dressings and other components as directed;
• Ensure ingredients are stored, labelled and dated correctly in line with food safety requirements and stock rotation principles (first-in, first-out);
• Check the quality, freshness and specification of ingredients on receipt and during preparation, and report any concerns to the Head Chef
• Cook and plate dishes to the specifications, presentation standards and timing expectations set by the Head Chef;
• Operate a designated section of the kitchen (such as pasta, grill, sauté, larder or dessert) as rostered;
• Maintain consistency in taste, portion size and presentation across all covers;
• Communicate clearly with other kitchen staff and front-of-house team members during service, including calling and responding to dockets;
• Adjust workflow to manage peaks, allergies, dietary requirements and special orders;
• Assist in menu development, tasting and trials when requested.
• Comply at all times with the Food Standards Code, the Food Act 2003 (NSW), the Food Regulation 2015 (NSW) and Sugo's food safety program;
• Maintain personal hygiene and appearance standards, including the correct wearing of the provided uniform, apron, hair restraint and safety footwear;
• Clean, sanitise and maintain workstations, equipment, utensils, cool rooms, freezers, dry stores and floor areas before, during and after service;
• Comply with the Work Health and Safety Act 2011 (NSW) and the Work Health and Safety Regulation 2017 (NSW), and with the Company's WHS policies and procedures;
• Receive, check and store deliveries in accordance with Company procedures, verifying quantities, quality and use-by dates against orders and invoices;
• Rotate stock and monitor levels within the assigned section, alerting the Head Chef when reordering is required;
• Assist with periodic stocktakes and end-of-month inventory counts;

Qualifications needed:
• Relevant Culinary qualification or equivalent relevant work experience
