TITLE: Meat Processor OCCUPATION: Butcher or Smallgoods Maker 351211 SALARY: $79,5000 to $85,000 plus superannuation HOURS: Full Time 38 hours p/w TRADING NAME: Flinders Island Meat Pty Ltd EMPLOYER:: Flinders + Co LOCATION: Port Melbourne, VIC Experience Required: min 1 year in a relevant role Duties: Some of the duties you will be required to perform include: Prepare meat for retail and production by deboning, trimming, cutting, slicing, mincing and portioning meat to required specifications. Manufacture smallgoods, including sausages and other processed meat products, by selecting and preparing suitable meats and ingredients. Prepare marinades, cures, seasonings and spice mixes for meat and smallgoods production in accordance with recipes and production requirements. Operate meat-processing and smallgoods equipment, including mincers, grinders, mixers, tenderisers, sausage filling machines, smoking chambers and cooking equipment. Prepare value-added meat products, including crumbed, marinated, seasoned and cured cuts, ensuring consistent quality, presentation and food safety standards. Provide customers with advice on suitable meat cuts, preparation methods and product uses.
