Trident Lismore Pty Ltd t/a The Trident Fish and Grill is hiring several experienced Cooks for our Lismore store at 181 Keen Street, Lismore NSW 2480. We are part of a family seafood tradition that began in 1984. In 2024, we brought that tradition to the Lismore CBD. Our kitchen trades every day of the week and prepares fresh seafood, grilled dishes, burgers and salads for a steady base of local and regional customers.
These are full-time roles with an annual salary of AUD 75,000 to AUD 85,000 plus superannuation. The salary reflects current market rates and what the position requires.
Working as part of our kitchen team, you will handle food preparation and service across every shift. You will help us deliver each dish to the same standard, uphold our food quality and keep the kitchen running smoothly.
Key responsibilities:
- Assess food items to ensure they meet quality and safety criteria.
- Control cooking equipment temperatures to achieve ideal cooking conditions.
- Prepare and cook a diverse range of meals following established recipes and presentation guidelines.
- Season dishes correctly during the cooking process to enhance flavour.
- Serve food in appropriate portions, ensuring an appealing presentation with sauces and garnishes.
- Store food in temperature-controlled environments to maintain freshness and prevent spoilage.
- Prepare meals that accommodate specific dietary needs and restrictions.
- Assist the Head Chef with seasonal menu planning, reflecting customer preferences and available ingredients.
- Calculate food requirements for daily operations and peak trading periods to minimise waste and ensure adequate supply.
- Monitor inventory levels of ingredients and supplies, placing orders as necessary to maintain stock.
- Train and mentor kitchen staff and apprentices on cooking techniques, food safety practices, and kitchen operations.
- Collaborate with other kitchen staff to ensure efficient workflow and timely service during busy periods.
- Prepare trial dishes and daily specials as directed by the Head Chef, and provide feedback on preparation methods to support ongoing menu improvement.
About you:
- Certificate III or IV in Commercial Cookery, or an equivalent qualification (Preferred)
- A minimum of 1–2 years' experience working in a commercial kitchen
- Able to stay calm and productive during busy, high-volume service
- Dependable, well-organised and practical in your approach
- Sound knowledge of food safety practices and regulatory requirements
- Flexible availability across a 7-day roster, including weekends, evenings and split shifts
- Able to work on-site at our Lismore store and willing to commute or relocate if needed
