About the Role
The Cook will be responsible for preparing and cooking a variety of Chinese and broader Asian-style dishes, supporting daily kitchen operations and maintaining high food safety and hygiene standards. The role plays a key part in delivering consistent, quality meals during high-volume service periods and works collaboratively with other kitchen staff to support smooth back-of-house operations.
Key Duties and Responsibilities
- Prepare and cook a range of menu items including entrees, mains, sides and desserts according to traditional Asian recipes (including Chinese, Malaysian and Taiwanese dishes)
- Regulate temperatures of cooking equipment such as ovens, grills, fryers and woks
- Portion, garnish and present food attractively and consistently
- Store and label ingredients correctly, ensuring temperature and hygiene control is maintained
- Assist with planning menus and estimating food requirements as directed
- Ensure compliance with food safety, hygiene and allergen requirements at all times
- Assist with inventory management including monitoring stock levels, receiving deliveries and rotating stock
- Train and support junior kitchen staff as needed
- Clean and maintain kitchen workspaces, tools and cooking equipment
Skills and Experience
- Certificate III in Commercial Cookery (or equivalent), including at least two years of on-the-job training; or Certificate IV in Commercial Cookery with at least one year of relevant experience;
- Alternatively, minimum of three years of relevant experience in a commercial kitchen environment (preferably specialising in Asian cuisine);
- Proven knowledge of Asian cooking techniques, preparation methods and traditional dishes
- Ability to work in a fast-paced kitchen and perform under pressure
- Strong understanding of workplace health and safety, food hygiene and kitchen protocols
- Ability to work rostered shifts including evenings, weekends and public holidays
Chef
Full-time | Salary: $65,000 - $70,000 per annum
About the Role
The Chef is responsible for managing kitchen operations and preparing a high standard of Chinese and other Asian cuisine. Working closely with the Head Chef and senior kitchen team, the role ensures that all meals are consistently prepared, presented, and delivered to meet quality, safety, and service expectations.
Key Duties and Responsibilities
- Plan, prepare and execute menu items across lunch and dinner services, including signature dishes and seasonal offerings
- Supervise and coordinate the work of cooks and kitchenhands to ensure efficiency and consistency
- Ensure dishes are prepared using traditional Chinese and broader Asian techniques, including wok cooking, roasting, steaming, and braising
- Monitor portion sizes and food presentation to maintain high standards
- Maintain stock levels, assist with ordering supplies, and monitor inventory use
- Prepare cost estimates of food and labour and contribute to menu development
- Train and mentor junior kitchen staff and ensure ongoing skills development
- Enforce compliance with workplace health and safety, HACCP and food hygiene regulations
- Ensure kitchen cleanliness and hygiene are maintained at all times
Skills and Experience
- AQF Certificate IV in Commercial Cookery with at least one year of relevant post-qualification experience
- At least three years of full-time employment in a chef role (without formal qualifications), preferably in a high-volume Asian kitchen
- Demonstrated experience in Chinese or pan-Asian cooking, including preparation of regional dishes such as Hainanese Chicken Rice, Laksa, BBQ Roast Pork, and stir-fried noodles
- Proven ability to lead a small team and manage service under pressure
- High level of attention to detail and food presentation
- Strong knowledge of food safety and hygiene regulations
