Suku is currently seeking a dedicated and creative full-time Sous Chef to join our team. We are committed to delivering quality food and friendly service in a welcoming dining environment.
The ordinary hours of work will be 38-45 hours per week (Wednesday-Sunday). The successful candidate will report directly to the Head Chef and owner.
As a Sous Chef at Suku, your responsibilities include but are not limited to:
? Preparing and cooking authentic Indonesian dishes, including the preparation of traditional Indonesian spice pastes (bumbu), marinades, sambals and sauces using authentic recipes and techniques
? Maintaining high standards of food quality, consistency and presentation throughout preparation and service
? Assisting with menu planning and the development of seasonal specials and new dishes.
? Estimating food requirements, monitoring stock levels, ordering food supplies, and assisting with food cost control and waste minimisation.
? Supervising food preparation and guiding kitchen staff on cooking techniques, recipes and presentation standards.
? Assisting with the training and supervision of junior kitchen staff to maintain an efficient and collaborative kitchen environment.
? Ensuring compliance with food safety, hygiene and sanitation regulations, including proper food storage, rotation and preservation practices.
? Working closely with the Head Chef, management and front-of-house team to ensure efficient kitchen operations and a high-quality dining experience for customers.
Minimum Requirements:
? A relevant Diploma in Commercial Cookery (or equivalent)
? At least 2 years experience as a Sous Chef
? Experience preparing authentic Indonesian cuisine, including Balinese dishes, is highly desirable
? Strong understanding of food safety, hygiene, and kitchen cost control
? Ability to train, supervise, and support junior kitchen staff
