Chef JOB TITLE: Chef JOB TYPE: Full-time, ongoing LOCATION: Kingscote SA SALARY: $70,000 - $85,000 MAIN DUTIES/RESPONSIBILITIES • Plan, prepare and cook meals for breakfast, lunch, dinner and in-room dining services in accordance with the property's menus and service standards. • Assist the Head Chef to develop and review menu items, taking account of guest demand, food cost, seasonal availability and kitchen capacity. • Prepare ingredients and cook dishes using appropriate commercial cooking techniques and equipment. • Monitor the quality, portioning, temperature and presentation of food throughout preparation and service. • Estimate food and ingredient requirements and assist with ordering, receiving, storage, stock rotation and waste reduction. • Maintain food-safety, hygiene and sanitation standards throughout kitchen, storage and food-preparation areas. • Coordinate kitchen workflow during service, provide direction and training to cooks, stewards and kitchenhands, and take charge of the kitchen in the Head Chef's absence. • Support preparation for functions, group bookings and periods of high occupancy. • Monitor kitchen equipment and report maintenance, safety or operational issues. • Accommodate reasonable dietary requirements and communicate menu availability and service issues to front-of-house staff. SKILLS & EXPERIENCE Qualifications: Certificate IV in Kitchen Management (SIT40521) or equivalent, or Certificate III in Commercial Cookery (SIT30821) with at least two years of relevant commercial cooking experience. Food-safety handler training (SITXFSA005/SITXFSA006) is required; a Food Safety Supervisor certificate is desirable. Experience: Relevant commercial kitchen experience, preferably in a hotel, resort, restaurant or comparable operation.
