Retail Manager

Subway is one of the most recognised names in quick-service food, trading from tens of thousands of restaurants in more than 100 countries with a menu of subs, wraps and salads made fresh to each customer's order. Our store at 172 Commercial Road in Morwell serves the town and the wider Latrobe Valley in Gippsland, regional Victoria, where a strong working community keeps the counter busy from the breakfast rush through to the evening. Tradespeople and shift workers, office staff, students, families and travellers moving through the region all rely on us for a quick, fresh meal, so the store has to work at pace without ever letting quality or presentation slip. To keep that momentum going, we are now seeking an organised, people-focused Retail Manager who will take full ownership of the store's day-to-day running and lead the team with confidence. Retail Manager | Subway - Morwell Key Responsibilities • Run the store's daily operations from open to close, including opening checks, cash handling, till counts and end-of-day banking and reconciliation. • Build and manage the store's operating budget, keeping a close eye on labour, food and overhead costs and finding practical ways to improve margins. • Hire, induct and coach sandwich artists, prepare weekly rosters that match staffing levels to expected trade, and hold the team to clear performance expectations. • Determine the product and fresh ingredient mix best suited to local demand, set appropriate stock holding levels and define the service standards the team must deliver. • Lead by example on the floor, guiding customers through bread, filling and sauce choices, answering questions on allergens and dietary needs, and suggesting combinations that suit their tastes. • Put in place purchasing procedures for ingredients, packaging and consumables, and place regular orders with Subway's approved suppliers. • Receive and check deliveries, rotate stock and make sure all produce is stored at the correct temperature and used well within its shelf life. • Maintain accurate records of sales, stock on hand, wastage and financial transactions, reconciling the figures against daily takings. • Set menu and promotional pricing in keeping with Subway brand guidelines and the store's own cost structure. • Plan and run local marketing activity, from in-store promotions and connections with local clubs, schools and businesses to rolling out Subway's national campaigns in the store. • Coordinate catering requests and app and online delivery orders so they are prepared accurately and ready on time. • Enforce workplace health and safety and food-hygiene requirements under Australian regulations and Subway's operating procedures, including temperature logs and cleaning schedules. • Handle customer feedback and complaints promptly and courteously, turning problems into a reason for customers to come back. • Analyse sales trends and peak trading periods and use them to guide rostering, ordering and promotional decisions. • Prepare the store for franchise quality, food safety and compliance audits, and act quickly on any findings so standards are met every day. • Report regularly to the store owner on sales, costs, staffing and overall store performance. Qualifications and Experience • A minimum of 1 year of relevant experience managing a retail, food service or hospitality operation. • An AQF Associate Degree, Advanced Diploma or Diploma qualification.
